sysutils/graylog: update to 5.0.2
- support JAVA_HOME
- accept additional java parameters in rc.conf
- OpenJDK17 is now required
- remove unsupported JVM tunables

sysutils/graylog: amend .sample to comply with tighter build rules
- while here, remove forced IPv4 requirements, graylog is no longer so
opinionated about this

- align file locations to match new upstream config
- amend messages and UPDATING to alert users
- use upstream sample files for default configuration

New port: sysutils/graylog
Graylog is a centralized log server that accepts various structured
and unstructred log data. Logs are stored in Elasticsearch. Graylog
let's you search and analyze logs using a REST HTTP API.
